Carol (Caro) Huffstetler Knight, 99 of Johnston, South Carolina joined her Lord and Savior on February 10, 2026. Carol was a devoted wife, mother, grandmother, and great-grandmother. She is leaving behind a legacy of love, strength, and unwavering devotion to her family.
Born on February 5, 1927 in Chapin, South Carolina, Carol was the cherished daughter of the late Arthur and Willie Mae Mayer Huffstetler.
Carol was preceded in death by her beloved husband, William “Bill” Knight; her treasured granddaughter, Shaunna Knight; her parents; and all of her siblings: Jack Huffstetler, Clarence Huffstetler, Leonard Huffstetler, Rudy Huffstetler, Jim Huffstetler, Margie Jordan, Doris Long, and Nell White.
Carol was a devout Christian and a long-standing member of Providence Baptist Church. She loved the Lord with all her heart and boldly shared her faith with everyone she encountered. Her life reflected her deep belief in Christ through her kindness, generosity, and steadfast prayer for her family and friends. Her faith was her foundation and her greatest source of strength.
For more than 50 years, Carol proudly owned and managed the PK Restaurant in Johnston, where she became a beloved fixture of the community. She dedicated herself wholeheartedly to serving her loyal customers, many of whom became like family over the years. Through the ups and downs of business and life, she faced countless obstacles with determination and grace. With true Southern grit and unwavering faith, Carol met every challenge head-on, building not just a successful restaurant, but a lasting legacy of hard work, resilience, and community devotion
Family was the heart of Carol’s life. She was a steady presence, offering wisdom, kindness, and unconditional love to her children, grandchildren, and great-grandchildren. Her home was a place of warmth and comfort where family gathered, traditions were honored, and countless memories were made.
She is lovingly remembered by her children: Hal Knight (Terri), Kathy Thomas (Allen), Danny Knight (Tina), and Ken Knight (Trish).
She also leaves behind her cherished grandchildren: Matt Knight (Tiffany), Jason Knight (Rachel), William Knight (Zoe), Meghan Johnson (Shelton), Alex Thomas, Sarah Knight, and Carolyn Knight.
Her legacy continues through her great-grandchildren: Lindsay Knight, Wes Knight, Avery Knight, and Jase Knight.
Carol’s life was a testament to devotion, resilience, and deep love for her family. Though she will be deeply missed, her memory lives on in the generations she nurtured and the many lives she touched. Her family finds comfort in knowing she is reunited with her loved ones who have gone before her.
A visitation will be held from 11:30-1:00 on Saturday, February 14, 2026, at Providence Baptist Church,1701 SC-191, Johnston, South Carolina, with a 1:00 pm service to follow. Burial will take place at Sunset Gardens Memorial Park, 1339 Columbia Rd., Johnston, SC.
In lieu of flowers, memorial contributions may be made to Providence Baptist Church or St. Jude Children’s Hospital.
